The recipe hasn't changed in thirty years and isn't about to. 100% certified free-range Australian pork, a light salty brine, wood smoked slow and low.

Bone-in, because the bone does the work giving you moisture through the bake and more flavour in every slice. Rind on: score it, glaze it, let the oven do the rest.

Four kilos is Christmas lunch, then Boxing Day sandwiches, then that quiet 11pm visit to the fridge. And you still get the bone for the soup.

We can't promise shank or butt end. Both present well and carve beautifully.
