The same recipe we've been making for thirty years. 100% certified free-range Australian pork, a light salty brine, then wood smoked slow and low for that deep, rich flavour. Nothing about it is scaled down except the size.

One kilo is Christmas for two to four, the ham you bring when you're not hosting. It also fits in a normal oven and a normal fridge, which a leg does not.

Glaze it like a big one - score the top, brush it, ten minutes under heat and it looks like it took all day.
