A whole side, ready to make a Christmas entrance.

Tasmanian salmon, cured and cold smoked slow and low over real wood. A full fillet, unsliced, so you carve it as thick or as thin as you like and it stays fresher on the cut face for longer than anything pre-sliced ever will.

This is the one for a big table or a long lunch. Lay the whole side on a board with lemon, capers and dill and let people help themselves, or slice it down over three or four days of leftovers, breakfasts and late sandwiches.

Fillets run between 800g and 1.2kg, so you'll get what the fish gives you. Sold by the piece, not to the gram.
